Candied Sweet Potato Mash
A holiday classic!

Ingredients |
3-4 sweet potatoes
1/2 cup packed light brown sugar
1/3 cup salted butter, softened
1/2 teaspoon vanilla extract
1/2 cup pecans, chopped
1/4 teaspoon cinnamon
1/8 teaspoon allspice
Salt and pepper, to taste
2 cups miniature marshmallows

Instructions |
Preheat the oven to 375 degrees.
Lightly grease a 9” x 13” baking dish.
Peel the sweet potatoes and dice them into large cubes.
Boil a pot of water and place sweet potatoes in.
Let them cook on medium heat for 15 minutes or until fork tender then drain.
In a large bowl, hand mash the sweet potatoes. Add in the brown sugar, butter, cinnamon, allspice, vanilla extract and salt & pepper.
Place the mashed sweet potato into the baking dish.
Add in the chopped pecans and spread into prepared pan.
Sprinkle the marshmallows on top.
Bake for 20-25 minutes or until marshmallows are golden brown.
