Classic Meatloaf

Simple to make & you can do it gluten free too!

Ingredients |

  • 1 lb ground beef (or slightly more)

  • 3/4 cup panko bread crumbs (you can use gluten free ones too!)

  • 3/4 cup ketchup, divided

  • 1/2 cup finely chopped onion

  • 1 egg

  • 1 tablespoon Worcestershire sauce

  • 3 teaspoons minced garlic

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon paprika

  • 1/4 cup almond milk

Instructions |

  • Pre-heat your oven to 350 degrees while you prep the ingredients.

  • Chop 1/2 cup of onion and sauté it in a pan with some olive oil for a few minutes until it becomes translucent.

  • In a large mixing bowl, add in the ground beef, 1/2 cup of ketchup, onion, egg, Worcestershire sauce, bread crumbs, milk and seasonings. Mix everything together well. I personally use my hands for this part but you could use a large cooking spoon if you’d like.

  • Use a large cookie sheet and place a piece of aluminum foil on the sheet. Shape the mixture into a meatloaf and pull the sides of the aluminum foil up around it to create a barrier and let it loosely cover part of the top. It does not need to be fully covered but just loosely around it. This prevents anything from leaking out while it cooks.

  • Drizzle additional ketchup over the meatloaf and sprinkle some black pepper on top before placing it in the oven.

  • Cook for about 45 minutes & then check to see if it is done. You might need to put it back in the oven for another 5-10 minutes depending on your oven.

  • Serve & enjoy!
