Chocolate Chip Cookies
GLUTEN FREE [Suggestions for Dairy Free}
I can’t believe how easy and delicious these are. Definitely a family favorite in our household!
Ingredients |
2 1/4 cups all-purpose gluten-free flour (Cup4Cup)
1 tsp. baking soda
1 tsp. salt
3/4 cups / 12 tbsp salted butter, melted
1 cup packed light brown sugar
2 egg yolks
1/2 cup white sugar
1 1/2 tsp. vanilla extract
4 tbsp. heavy whipping cream or almond milk
1 cup chocolate chips

Preheat your oven to 375 degrees.
Mix together the all-purpose gluten-free flour, baking soda and salt.
In a separate bowl, pour in the light brown sugar and white sugar. Add in the melted butter. Mix together with a fork until well combined, about 2 minutes.
Add in the vanilla extract and egg yolks into the mixture. Combine well.
Add the flour mixture into the wet mixture and mix just until its all combined.
Add the heavy whipping cream and mix. If you would like to make this dairy free, just use almond milk instead. You might need to add an additional tablespoon or two. The dough should be sticky and thick but still mixable.
Add in the cup of chocolate chips. Once mixed, if the dough is too thick, add another tablespoon or two of milk until it forms a nice cookie dough consistency.
Line a cookie sheet with parchment paper.
Roll the dough into balls, roughly a tablespoon per cookie. Once rolled into a ball, it should be a little larger than a quarter. You can make them bigger if you would like but you will need to adjust the cooking time accordingly.
Bake the cookies for 9-10 minutes or until they are barely light gold. You won’t want to overbake these so keep a close eye on them!
