Instructions |
Preheat your oven to 400 degrees.
Prepare your fresh salmon. Place parchment paper on a baking sheet then add your salmon fillet. If you are using 1 lb, I would suggest cutting it into 3-4 pieces so it cooks quickly and evenly.
Season the salmon with salt, pepper, onion powder & garlic powder.
Bake the salmon for 20-23 minutes, depending on the thickness of the fish.
While the fish is cooking, very finely dice the onion, 1/2 red bell pepper and a few cloves of fresh garlic. If you have pre-minced garlic, you can use 2 teaspoons of that too!
Adding 2-3 tablespoons of olive oil to a medium sauce pan, sauté the onion, bell pepper and garlic on medium low heat for a few minutes until transparent.
Once the salmon is done cooking, remove it from the skin and flake the fish into a mixing bowl. Add the cooked onion, bell pepper & garlic to the bowl.
Add the 2 eggs (already beaten in a separate bowl), breadcrumbs (Panko work too!), fresh parsley, mayonnaise and Worcestershire sauce to the bowl, along with all of the seasonings (salt, pepper, onion powder, garlic powder and paprika).
Mix everything together well. Then, using your hands, take roughly 2 tablespoons of mixture and form it into a patty. You can make them whatever size you’d like. I prefer to make mine 2-3 inches in diameter and about 1/2 inch thick.
Once you have formed the salmon cakes, heat up a pan on the stove with 2 tablespoons of olive oil to medium high heat.
When the pan is hot, add 3 cakes to the pan at a time and sear them for roughly 3-4 minutes on each side or until they turn a nice golden brown. Repeat until the entire batch is done.
Serve with some fresh homemade tartar sauce, rice & veggies and enjoy!!
