Salmon Cakes

GLUTEN + DAIRY FREE

Seriously, the first time I made these, I freaked out. They are so incredible! Don’t forget to make the creamy tartar sauce with it!

Ingredients |

  • 1 lb fresh salmon

  • 1 cup gluten free bread crumbs

  • 1/2 red bell pepper, very finely diced

  • 1 small yellow onion (roughly 1 cup), very finely diced

  • 2-3 teaspoons / a few cloves minced garlic

  • 2 eggs, beaten

  • 3 tablespoons mayonnaise

  • 2 teaspoons Worcestershire sauce

  • 1/4 black pepper

  • 1/2 teaspoon salt

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon sweet paprika

  • 1/4 cup fresh parsley, finely chopped

  • Olive oil

  • Preheat your oven to 400 degrees.

  • Prepare your fresh salmon. Place parchment paper on a baking sheet then add your salmon fillet. If you are using 1 lb, I would suggest cutting it into 3-4 pieces so it cooks quickly and evenly.

  • Season the salmon with salt, pepper, onion powder & garlic powder.

  • Bake the salmon for 20-23 minutes, depending on the thickness of the fish.

  • While the fish is cooking, very finely dice the onion, 1/2 red bell pepper and a few cloves of fresh garlic. If you have pre-minced garlic, you can use 2 teaspoons of that too!

  • Adding 2-3 tablespoons of olive oil to a medium sauce pan, sauté the onion, bell pepper and garlic on medium low heat for a few minutes until transparent.

  • Once the salmon is done cooking, remove it from the skin and flake the fish into a mixing bowl. Add the cooked onion, bell pepper & garlic to the bowl.

  • Add the 2 eggs (already beaten in a separate bowl), breadcrumbs (Panko work too!), fresh parsley, mayonnaise and Worcestershire sauce to the bowl, along with all of the seasonings (salt, pepper, onion powder, garlic powder and paprika).

  • Mix everything together well. Then, using your hands, take roughly 2 tablespoons of mixture and form it into a patty. You can make them whatever size you’d like. I prefer to make mine 2-3 inches in diameter and about 1/2 inch thick.

  • Once you have formed the salmon cakes, heat up a pan on the stove with 2 tablespoons of olive oil to medium high heat.

  • When the pan is hot, add 3 cakes to the pan at a time and sear them for roughly 3-4 minutes on each side or until they turn a nice golden brown. Repeat until the entire batch is done.

  • Serve with some fresh homemade tartar sauce, rice & veggies and enjoy!!
