Poblano Chicken Chili

1 medium yellow onion, chopped
2 poblano peppers, chopped
1 jalapeno, diced
1 bundle green onions
4 teaspoons minced garlic
3 1/2 teaspoons ground cumin
2 1/2 teaspoons sweet paprika
1 1/2 teaspoons chili powder
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 32 oz. box chicken broth
6 boneless, skinless chicken thighs
3 oz. cream cheese (Dairy free option: Kite Hill Cream Cheese)
1 can white beans, drained
1 cup frozen corn / 1 can corn, drained
3/4 cup salsa verde
Fresh cilantro, for serving
Tortilla strips, for serving

Instructions |
Cook your chicken thighs in an Insta Pot for 16-17 minutes on the poultry setting. Season with salt & pepper before cooking. Once the chicken is done cooking, shred and set aside.
Chop the onion, two poblano peppers and dice the jalapeno pepper. If you like a spicier soup, use all of the seeds from the peppers!
In a large pot, add 2-3 teaspoons of olive oil and heat to medium high heat. Add in your chopped onions and peppers.
After the onions and peppers have cooked for about 5-7 minutes and started to slightly soften, add in the minced garlic. Stir often so that it doesn’t stick and burn.
Add in all of the spices at once and continue to stir well. The mixture will thicken and become very fragrant. Cook for about 7-8 minutes.
Add in the 32 oz box of chicken broth and pinch in some additional salt and pepper.
Let the broth, onions, peppers and seasonings simmer on medium heat for around 15 minutes.
Put the cream cheese in the microwave for 10 seconds to slightly soften/melt it prior to adding it to the soup.
Add in the shredded chicken, canned white beans, corn, salsa verde and softened cream cheese.
Once everything has been combined, turn the stove down to a medium-low temperature. Stir well then taste test. Depending on your preferences, you might want to add additional chili powder and salt. If you want to reduce the spice level, add more cream cheese or almond milk to taste. If you want to make it spicier, add a few dashes of cayenne pepper.
Once you are ready to serve, chop up some cilantro and green onions and top your soup with the cilantro, green onions and tortilla strips. Enjoy!
