Dreamy Brownies
GLUTEN + DAIRY FREE

3/4 cup gluten free all purpose flour (Cup4Cup)
1/2 cup dairy free butter (Miyoko Vegan Butter)
3/4 cup granulated white sugar
1/2 cup light brown sugar, packed
1/2 cup cocoa powder (Hershey’s)
2 eggs
1 tablespoon pure vanilla extract
2 tablespoons almond milk (or more)
1/2 teaspoon baking soda
1/2 teaspoon salt

Preheat your oven to 350 degrees.
Grab a 8x8 square baking dish and spray it with a natural cooking spray. (I prefer to use a grapeseed oil spray).
Using a medium size mixing bowl, add in the white sugar, brown sugar, vanilla extract and melted butter. Mix well with a spoon.
Once the wet mixture has been well combined, slowly add each egg in and mix well.
In a separate mixing bowl, add in the flour, cocoa powder, salt and baking soda.
Combine the wet and dry ingredients and stir well. The batter will be very thick at this point.
Add in 2-3 tablespoons of almond milk to slightly thin out the mixture. You could even add a few more depending on the consistency. Don’t add more than 5 tablespoons though. The mixture should be on the thick side.
Pour the brownie batter into your greased baking dish and spread it with a spoon. It might appear that there is not enough but they will rise in the oven. Make sure you smooth the batter around to all 4 corners of the dish so the bottom of the dish is fully covered with an equal amount of batter.
Bake for 35-38 minutes at 350 degrees. The exact cook time will depend on your oven. Once a toothpick comes out clean, you know they are ready!
