Dreamy Brownies

GLUTEN + DAIRY FREE

Ingredients |

  • 3/4 cup gluten free all purpose flour (Cup4Cup)

  • 1/2 cup dairy free butter (Miyoko Vegan Butter)

  • 3/4 cup granulated white sugar

  • 1/2 cup light brown sugar, packed

  • 1/2 cup cocoa powder (Hershey’s)

  • 2 eggs

  • 1 tablespoon pure vanilla extract

  • 2 tablespoons almond milk (or more)

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • Preheat your oven to 350 degrees.

  • Grab a 8x8 square baking dish and spray it with a natural cooking spray. (I prefer to use a grapeseed oil spray).

  • Using a medium size mixing bowl, add in the white sugar, brown sugar, vanilla extract and melted butter. Mix well with a spoon.

  • Once the wet mixture has been well combined, slowly add each egg in and mix well.

  • In a separate mixing bowl, add in the flour, cocoa powder, salt and baking soda.

  • Combine the wet and dry ingredients and stir well. The batter will be very thick at this point.

  • Add in 2-3 tablespoons of almond milk to slightly thin out the mixture. You could even add a few more depending on the consistency. Don’t add more than 5 tablespoons though. The mixture should be on the thick side.

  • Pour the brownie batter into your greased baking dish and spread it with a spoon. It might appear that there is not enough but they will rise in the oven. Make sure you smooth the batter around to all 4 corners of the dish so the bottom of the dish is fully covered with an equal amount of batter.

  • Bake for 35-38 minutes at 350 degrees. The exact cook time will depend on your oven. Once a toothpick comes out clean, you know they are ready!
