Creamy Parmesan Mushroom Chicken

INGREDIENTS ||

  • 2 packs boneless skinless chicken tenderloins, cubed

  • 2 tablespoons Olive oil

  • 8 ounces sliced mushrooms

  • Salt (to taste)

  • Pepper (to taste)

SAUCE

  • 1/4 cup butter

  • 2 tablespoons garlic, minced

  • 1 tablespoon flour

  • 1/2 cup chicken broth

  • 1 cup heavy cream (or half & half)

  • 1/2 cup grated Parmesan cheese

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1 cup chopped spinach

INSTRUCTIONS ||

  • Using a large skillet, heat olive oil to medium high heat and cook chicken until cooked. Remove and set aside in a separate bowl.

  • Add in mushrooms and cook for a few minutes until they are tender. Remove those as well and set aside.

  • Next, to make the sauce, add the butter to the skillet and melt. Add in the garlic and cook on a lower heat to prevent burning.

  • Add the flour and whisk until it’s filled mixed in. The sauce will start to thicken.
